But the last 15 years have ushered in some exciting new developments, and a different set of associations now comes to mind. Burgundy? Why, that’s courageous, authentic, young, accessible! All that is thanks to the winemakers of a new generation who have dared to take the leap into this established region, sometimes from far away. Their approach fuses a deep-rooted appreciation of Burgundy‘s unique terroir and flavours with modern, ecological approaches to viticulture. If you know Wasenhaus, you’ve at least indirectly heard of Bastian Wolber of Laisse Tomber. Bastian is Christoph’s brother and, like many of the most exciting voices in the “new Burgundy”, part of the generation that started making their own wines around 2016.

Once upon a time, Bastian lived in Berlin as a trained tax accountant… and then decided he’d rather learn from Jean-Yves Bizot and Anne & Jean-François Ganevat about the high art of pure Burgundian winemaking, guided by patience, intuition and precision. In 2020, he began as a négociant, working with organically farmed grapes from winemaker friends. In 2021 came his first own parcel (Sous le cerisier), and, since 2022, he’s been standing fully on his own two winemaking feet. Since then, the project has grown steadily – in size as much as depth!

Bastian’s wines are powerful, clear, and yet restrained. In the cellar, Bastian favours long élevage, patience, and restricts himself to applying only the lightest possible touch. On paper, it may read like natural wine; in the glass, it drinks like cool-climate classicism with a modern sensibility.

By 2024, he had expanded the estate to 4.5 hectares, with parcels in Bouzeron, Morey-Saint-Denis, Vosne-Romanée, and the Côte de Nuits, among others. Despite this growing success, he still knows – and works – every vine and every plot himself, from horse-drawn ploughing to late pruning and high trellising. In everything Bastian does, it’s clear that this isn’t some investor driven project, but a winemaker quietly and consistently walking his own path.
