Domaine Dandelion was the discovery that got us thinking about the “New Burgundy” in the first place. Back in 2020, our dear friend Chiara Pepe (yes, that Chiara, from Emidio Pepe, whose pasta we still consider the best in the world) did her internship there. That’s how we came across Dandelion’s wines, and we’ve been happily pouring them ever since. And now, almost a decade on, Christian Knott is finally coming to Berlin for the next instalment of our Burgundy series.
Christian was cellar master at Domaine Chandon de Briailles before joining forces with Morgane Seuillot. Bit by bit, the two acquired several parcels in the sleepy village of Mavilly-Mandelot up in the Hautes-Côtes de Beaune. Just ten minutes from Meursault and Pommard, but in terms of landscape and mindset, it’s a world away: forests, pastures, mixed agriculture instead of monoculture. And that’s exactly what their wines reflect – they’re juicy, precise, deep. Finely structured, darkly spiced, full of quiet energy. What might look like minimalism in the cellar – whole bunches, no sulfur, no pumps, no fuss – is in truth the result of extreme care and clarity. Their labels (hand-cut and hand-glued from linen, hemp, and wildflower paper) tell the same story as the wines: every single detail matters. If you’re looking for an evening of precise natural winemaking, depth without heaviness, and craftsmanship in the truest sense, you won’t want to miss this one.
