Their approach fuses a deep-rooted appreciation of Burgundy‘s unique terroir and flavours with modern, ecological approaches to viticulture. Just before the holidays arrives your chance to discover one of the most exciting voices of the new Burgundy: Chantereves, headed up by Franco-Japanese husband and wife team Tomoko Kuriyama and Guillaume Bott, who will both be joining us for this very special evening. We’re not just linked to Tomoko by our love of great wine, but also by our mutual friend Eva Fricke, with whom Tomoko worked in the Rheingau.
What began as a small negociant project with fruit from organic growers has, over the years, turned into a full domaine. Today, Tomoko and Guillaume farm around 4.5 hectares of their own vines in and around Fussey in the Hautes-Cotes de Beaune. The vineyards sit high – up to 460 metres – on pale terre blanche limestone soils that give their wines tension and precision. Whether they’re using their own grapes or those sourced from their trusted farming partners, Tomoko and Guillaume are uncompromisingly clear about one thing: for them, it’s never about the fanciest appellation, but the highest standard in organic and biodynamic farming. In the cellar their approach is as straightforward as it is demanding: whole bunches, gentle extraction, long elevage, no unnecessary additives or interventions. What sounds simple requires a huge amount of skill and consistency, and the results prove it, too.
At our Chantereves dinner, you’ll be able to taste for yourself what makes Tomoko’s and Guillaume’s work so compelling: wines that don’t need to shout to make a point.
