Heimat #1: Veal “Kohlroulade” (Micha Schäfer, Germany)

Heimat doesn’t translate. And perhaps it doesn’t need to. It isn’t a concrete place, but a feeling, something that lives in memory, through smell, taste, and texture. All of us carry it, none of us need to agree on it.
Each month, we cook a classic that tastes like one kind of Heimat – across different kitchens and biographies – inspired by the people we live and work with in Berlin, grounded in the produce of our region.
Heimat #1: Veal Kohlroulade (Micha Schäfer, Germany)
When you encounter “brown sauce” in Germany, you should hope it’s the literal kind, not the metaphorical one. (The latter tends to involve neo-Nazis and much less pleasure.) Handled properly in the kitchen, there simply is little to rival a real hearty jus. A classic Veal Kohlroulade – veal wrapped in tender cabbage, slow-cooked and unapologetically rich – is its natural companion, and perhaps the ultimate comfort food. Which may also explain why this most German-of-German classics came up again and again when we (on Instagram) asked you about your strongest childhood food memories.
We prepare our Veal Kohlroulade for maximum nostalgia. Filled with Mecklenburg-Western Pomerania’s best veal, sourced from David and Viola Peacock, seasoned simply with salt, pepper, onions, and caraway, then rolled in blanched pointed cabbage. We serve it with a veal jus for the ages, plus mashed potatoes as an undefeated sauce vehicle. This time, however, the latter comes without Micha’s signature smoked butter, as your German Mutti probably doesn’t use it either. Bread and butter of course are also included.
And by the way: you’re welcome to have wine with it, but why would you? Instead, have it with a nice glass or two of Kunerts Kümmelschnapps (caraway schnapps) by Spiritus Rex.

Of course, you’re welcome to bring your vegetarian friends. We’ll find something else from the menu for them and they won’t have to go home hungry. The same goes for guests with gluten, or egg allergies or intolerances: the veal Kohlroulade itself is fine, but we’ll swap out the sides according to your needs. Let us know in advance and we’ll be happy to work it out.
