Kitchen Takeover: Ros Thai Gourmet Journey with Duangporn “Bo” Songvisava of Bo.Lan (Bangkok)

We’ve had the honour of hosting many wonderful chefs over the years, although we’ll admit: our collaborations – exceptions notwithstanding – have leaned decidedly European. For the first time, we’ll be hosting an Asian chef for a kitchen takeover this April, and not just any chef, but the magnificent Duangporn “Bo” Songvisava, Asia’s Best Female Chef 2013 and co-founder of Bangkok’s legendary Bo.Lan (1* Guide Michelin) who’ll be taking over our stoves together with her team.This special kitchen takeover forms part of a gastronomic diplomacy initiative by the Royal Thai Embassy in Berlin, introducing Chef Bo to Berlin audiences while showcasing authentic Thai cuisine through the lens of sustainable gastronomy, a core principle deeply embedded in Thai culinary heritage. The project highlights how the Thai kitchen, rooted in biodiversity, seasonal knowledge, and profound respect for ingredients, contributes meaningfully to global conversations on sustainability.

Since opening in 2009, Bo.Lan in Bangkok has brought exactly this spirit to life. It stands for Thai cuisine as it should be: rooted in time-honoured recipes, uncompromising in flavour, and deeply committed to sustainability and food security. Bo herself has long campaigned for the preservation of Thai culinary wisdom. In this, she has worked closely with small-scale farmers; an approach that is, of course, very close to our own Nobelhart hearts.

In that same spirit, Bo and her team will be working with the best local Berlin-Brandenburg produce wherever possible. But let’s not kid ourselves: there are things we in “potato Europe” simply cannot reproduce. So Bo will be bringing the essential spices, pastes, and ingredients that define her signature flavours.

As this is a proper kitchen takeover, your entire meal will be prepared by Bo & co., who will be quite literally filling up your table. Following a traditional starter, the main courses will be served samrap style – think family-style, but Thai – with six distinct dishes, all to be eaten together, passed around, layered, and combined. Exactly as it’s done at Bo.Lan in Bangkok, but with a Kreuzberg edge.

Arrival between 6 and 9.30 p.m.; the table is yours for 2:15 hours.

145.00 Euro per person for one starter, a Thai-style shared main course served samrap style with 6 components including salad, stir-fry, soup, rice, and side/dip elements

On top of that comes whatever else you choose to drink, but that’s entirely up to you. That said, we do expect a minimum beverage spend of €65.00 per person. Of course, we’ll be happy to recommend something. California sober is the new thing, so there’s plenty of non-alcoholic options available as well, including our alcohol-free pairing. While Chef Bo normally accommodates individual dietary requirements, it is difficult to do so while travelling. We kindly ask you to understand that for this particular event, she won’t be able to modify her dishes for vegetarian or vegan guests or people with shellfish allergies, as shrimp paste and fish sauce are essential components of her cuisine.
