Kitchen Takeover: Markus Stöckle (Rosi, Gül – Zurich, Switzerland)

We’re looking forward to our next kitchen takeover: on Sunday, May 31, Markus Stöckle and his team will be taking over our kitchen for one night.
Many of you may know Markus from Zurich, from ROSI and GÜL, which he runs together with his partner, chef Elif Oskan. Before that, his style was shaped by years in Munich’s fine dining scene, including time with Alfons Schuhbeck, as well as a stint at The Fat Duck with Heston Blumenthal. He is currently working on a new concept. In between, he’s making a short stop in Kreuzberg to bring a piece of Bavaria to our counter.
His cooking is a contemporary take on the Wirtshaus. Clearly rooted in Bavarian classics, but free of nostalgia, tired traditionalism, and folklore. Make no mistake though: Markus doesn’t dismantle tradition, but sharpens it. The result is a cuisine built on precise ideas, often surprising in structure, occasionally playful and multi-sensory. There’s an intellectual edge, but nothing heavy about it. Above all, it’s direct. People who have experienced Markus’s cooking tend to remember the details.
Case in point: Billy visited ROSI last year and has been a big fan ever since. Not least because of a Cordon Bleu that was so good it will simply have to make an appearance at this takeover.
Expect around seven courses. And yes, this is a proper takeover, not a four-hands dinner. Markus sets the tone for the evening – we Nobelharts are simply there to support. He’ll be bringing a few special ingredients from Zurich, the rest will come from the best producers in Berlin-Brandenburg.
