Sunday, June 29, 2025: Trippa x Nobelhart & Schmutzig

On June 29, Diego Rossi – head chef & owner of Milan’s iconic Trippa – will be joining us at Nobelhart & Schmutzig for a very special guest dinner that’s a little different from the usual. He’ll be cooking up five courses to share, all based on the kind of Italian cooking that’s made Trippa a reference point far beyond Milan – and he’s bringing the ingredients with him.
According to Billy, Trippa is Italy’s hardest table to get. So it’s just as well that you won’t have to go to Milan for (at least part of) the Trippa experience: the incredible warmth and honesty that suffuses everything they do.
Each dish at Trippa carries the story of a region, a territory, behind it. Ingredients are selected with near maniacal attention to sourcing – which, as you can imagine, is something that speaks directly to how we do things at Nobelhart. Diego’s cooking focuses on traditional recipes, always handled with clarity and care. He claims that “freedom, ours, yours and the ingredients”, is the key to each dish. That, as well as bold simplicity, deep knowledge and real technique. Diego is especially known for his vitello tonnato – probably the best you’ll ever have – as well as timeless classics such as panna cotta or carpaccio with hazelnut and sardines from Lake Garda. It’s the kind of food that doesn’t need explaining – but it definitely deserves trying. Which is exactly what you’ll be able to do here.
For the first time in a guest chef format at Nobelhart, Micha will be pulling his weight – he’s going to be joining Diego in the kitchen. And yes: he’ll be cooking Italian food. Not just a vague interpretation, but actual Italian recipes, approached through the lens of our sourcing philosophy. He’s quite excited about it, too. When asked why, Micha said in his typical charm: “Because everyone gets Italian food. Just for once, it’s nice not having to explain why it’s special.”
Together, Diego and Micha will serve up an eight-course menu: five from Trippa, three from us. It’s not fusion. It’s a shared dinner between two chefs who both care deeply about ingredients, about context, and about cooking food that actually means something. Radi Razaghi, sommelier at Trippa, will also be joining the festivities.
Please note: Diego is bringing his own ingredients and has informed us that unfortunately he won’t be able to serve any pescetarian, vegetarian, lactose or gluten free menus that night.
